Raw Cane Sugar – Panela

Panela is produced by using low heat to dehydrate raw sugarcane juice. The fresh
cane juice is first extracted from the sugar cane, and then boiled over earthen ovens,
producing a deep caramel-brown liquid sugar paste with grainy chunks of purified
crystallised sugar. The paste is then moulded and left to harden. Because it’s made
in such a simple way, it retains the molasses from the cane. The molasses give the
panela a distinct flavour, and contain calcium, iron, phosphorus, magnesium and a
high content of vitamins A, B, C and D.
Best before – Two years from being processed – though it will never really go bad if kept away from
moisture
